Why should I take this course? 

You should take this course if you are thinking about a career in the Hospitality and Catering industry. The course aims to give you a good introduction to Hospitality and Catering. You will learn how to prepare and serve food and drink in a variety of settings and cover all aspects of hygiene and food safety. At the end of the course you will be able to progress to Level 2 programmes. The course is practically based supported with some theory work.

What do I need to join the course?

You must be 16 years of age at the start of the course and have a genuine interest in pursuing a career in hospitality and catering.

You must have:­  

An Entry Level Certificate in Skills for Working Life or other Entry Level qualifications. Three GCSEs grade E to G are desirable but not essential.

You will need to attend an interview to judge your suitability for enrolment on the course. Good timekeeping, attendance and a willingness to learn will be important factors for the completion of the course.

What will I learn on the course?

 You will cover the following units:

 

Introduction to the hospitality and catering industry
Food safety in catering
Health and safety awareness for catering and hospitality
Introduction to healthier foods and special diets
Introduction to kitchen equipment
Introduction to personal workplace skills
Prepare and cook food by boiling, poaching and steaming
Prepare and cook food by stewing and braising
Prepare and cook food by baking, roasting and grilling
Prepare and cook food by deep frying and shallow frying
Regeneration of pre-prepared food
Cold food preparation

How will I be assessed?

You will be continually assessed throughout the course and this will include observation of practical tasks, on-line assessments and some written work. Evidence of competency will be included in a portfolio.

What qualification will I achieve if I successfully complete the course?

The name of the qualification you will achieve if you successfully complete the course is: City and Guilds Level 1 Diploma in Introduction to Professional Cookery.

Will I be able to gain any other additional qualifications?

You will further develop and gain qualifications in Literacy, Numeracy and ICT.  You will also be able to take a Personal Development course leading to a qualification in Personal Career Planning and Work Experience. 

What will I be able to do after the course finishes? 

Students who achieve the Level 1 Diploma in Introduction to Professional Cookery will be able to progress on to the Level 2 Diploma in Professional Cookery at the Skills Academy or another college.
