Why should I take this course?

You should take this course if you are thinking about a career in the Hospitality and Catering industry. The course aims to extend your skills in Hospitality and Catering. You will learn how to prepare and serve food and drink in a variety of settings and cover all aspects of hygiene and food safety. At the end of the course you will be able to progress to NVQ Level 3 programmes. The course is practically based supported with some theory work.

What do I need to join the course?

You must be 16 years of age at the start of the course and have a genuine interest in pursuing a career in hospitality and catering.

You must have:­

City and Guilds Level 1 Diploma in Introduction to Professional Cookery or Four  GCSEs at grades D to F including a grade D in English or a Level 1 Certificate in Adult Literacy

You will need to attend an interview to judge your suitability for enrolment on the course. Good timekeeping, attendance and a willingness to learn will be important factors for the completion of the course.

 

 

What will I learn on the course?

You will cover the following units:

Investigate the hospitality and catering industry
Food safety in catering
Health and safety in catering
Nutrition and special diets in catering
Kitchen operations, costs and menu planning
Applying workplace skills
Prepare and cook sauces, soups and stocks
Prepare and cook vegetables and pulses
Prepare and cook meat and offal
Prepare and cook poultry
Prepare and cook fish and shellfish
Prepare and cook rice, pasta, grains and egg dishes
Pepare and cook desserts and puddings
Prepare and cook bakery products

How will I be assessed?

You will be continually assessed throughout the course and this will include observation of practical tasks, on-line assessments and some written work. Evidence of competency will be included in a portfolio.

What qualification will I achieve if I successfully complete the course?
 
The name of the qualification you will achieve if you successfully complete the course is City and Guilds Level 2 Diploma in Professional Cookery.
 
Will I be able to gain any other additional qualifications?
 

If you have not already gained a higher grade pass (grade A* to C) in English and Mathematics you will undertake Level 2 qualifications in Literacy and Numeracy which are equivalent to higher grade passes.

What will I be able to do after the course finishes?

Students who achieve the Level 2 Diploma in Introduction to Professional Cookery can choose to progress to a Further Education College at Level 3 to continue their studies or achieve their first position within the industry.
